Parmigiano Reggiano 36 mesi stagionato. Selezioniamo e vendiamo da sempre il Parmigiano Reggiano di montagna, rispettando alcune regole che per questo prodotto sono basilari. La stagionatura minima deve essere di 36 mesi e il prodotto deve essere sempre dolcissimo. Con queste poche ma fondamentali regole il prodotto si presenta sempre perfetto. La confezione da circa 500 kg è mantenuta con il sottovuoto per conservare al meglio tutti i sapori. Dopo l’apertura di consiglia di lasciar respirare il prodotto per circa ½ ora fuori dal frigorifero per far asciugare la parte grassa che in modo naturale si forma sul prodotto con il sottovuoto.

La Culaccia è la parte migliore del prosciutto, la più pregiata, senza osso, senza gambo e senza fiocco (il piccolo ossicino a forma di conchiglia -anchetta in gergo- viene lasciato infatti per riconoscere tale parte del prosciutto). E' lavorata e stagionata in modo estremamente naturale, non è insaccata, né manipolata. Ha poco scarto e la sua forma consente di fare fette sempre uguali dall'inizio alla fine. Parmigiano Reggiano aged 26/28 months. We always select and sell mountain Parmigiano Reggiano, respecting some rules that are fundamental for this product. The minimum seasoning must be 26/28 months and the product must always be very sweet. With these few but fundamental rules, the product is always perfect. The pack of about 1 kg is kept under vacuum to preserve all the flavors. After opening it is advised to let the product breathe for about ½ hour out of the refrigerator to let the fatty part dry naturally, which forms on the product with the vacuum.
